The Ø300 mm aluminium pizza screen is the standard format of the range — the one matching the most widespread individual pizza diameter in French professional catering (30 cm). It is the screen used daily in most pizzerias, and the format ordered in the largest quantities for service rotation. A low-cost consumable whose regular renewal guarantees the baking quality of every pizza.

The 30 cm format (Ø300 mm) is the most ordered individual pizza size in French pizzerias. It balances the satiety of an individual meal, an accessible selling price and optimal oven occupancy (4 to 6 pizzas of 30 cm per deck depending on the oven). The Ø300 screen is sized so the pizza rests entirely on it with a slight 0-10 mm overhang — enough to keep the toppings contained and the base baking evenly.

Why a screen rather than a solid tray

The perforated aluminium screen produces a different bake from a solid tray or refractory stone. Placed directly on the screen, the pizza receives heat by convection (hot air circulating under the pizza) in addition to the heat radiated by the oven elements or burners. This double heat source speeds up the baking of the pizza base and produces a crisper crust than baking on a solid tray — the steam released by the dough escapes downward through the perforations instead of staying trapped under the pizza.

Food-grade aluminium is the reference material for professional pizza screens: light (makes fast handling in service easy), heat-resistant (withstands 250-300°C continuously without warping), easy to clean (smooth surface that does not hold burnt flour). The screens are compatible with professional dishwashers (60-70°C, fast cycles) — one pass per service is enough for routine maintenance.

Rotation and renewal

An aluminium pizza screen in intensive professional use (150-200 pizzas per day, 5 services per week) lasts on average 6 to 12 months before needing replacement — progressive warping under thermal cycling, build-up of ingrained baking residue, loss of flatness. Keeping 3-5 screens per format and per oven in rotation guarantees a clean, good-condition screen always available for service.

How many Ø300 screens should I order to start a pizzeria?
For a start-up, plan for at least 10 screens per pizza format. With 10 screens you have a sufficient rotation cycle: 4-5 in service at the oven, 4-5 in washing or waiting, 1-2 spare if a screen is warped or damaged. For a high-throughput pizzeria (150+ pizzas per service), go up to 15-20 screens per format to never run out of a clean screen mid-service.
Can Ø300 screens be used in a wood oven?
Not recommended — wood ovens (clay or brick deck, deck temperatures 350-450°C) expose the screen to temperatures that warp aluminium. For wood ovens, use stainless steel screens or place the pizza directly on the deck with a peel. Aluminium screens are optimised for electric stone ovens (250-300°C) and gas convection ovens (220-280°C).
