The standard XL9 (sole only) produces the same quantity of pizzas but with less complete baking from above.
9 Premium pizzas: the vault at this scale
At 9 pizzas per batch, the refractory vault covers a sole surface of 1360 × 1320 mm. The radiant surface is large — pizzas near the edges receive as much heat as those in the centre, thanks to a vault sized to cover the whole sole. It is an advantage that small Premium ovens (4 or 6 pizzas) do not always have: at large surface, radiant homogeneity is even more critical so that the 9 pizzas of a single batch are identical on the plate.
The 13.2 kW 3-phase power ensures fast heat recovery after each batch. Refractory stone sole and vault hold their working temperature even at a pace of 10 batches an hour. Over a 2-hour service, throughput reaches 90 to 108 pizzas an hour at cruise, i.e. 180 to 216 pizzas per service — more than enough for 100 covers with one pizza per cover.
XLP9 vs XLP9TR: how to choose?
The XLP9 (this model, €3,120) has a refractory stone vault and sole (standard top+sole). The XLP9TR (€3,730) is the full stone chamber version — refractory walls, vault and sole, maximum thermal mass. The €610 difference is justified by use: for 70-100 covers at a moderate to sustained pace (batches 3-5 min apart), the XLP9 is enough. For even more intensive service (100+ covers, back-to-back batches, Neapolitan at 450+°C), the XLP9TR holds its temperature better over the length of the service.

The XLP9 is the standard format for established pizzerias with 70 to 100 covers of capacity, a head pizzaiolo and a well-organised service rhythm. - For lightly topped pizzas (margherita, four cheeses), the refractory vault adds less value than for loaded pizzas. If your menu is mostly margherita and simple pizzas, the sole-only XL9 (€2,520) may be enough. If you offer pizzas with vegetables, meats, rocket or thick toppings, the XLP9's vault makes a real, visible difference on the plate.
- What electrical power should I plan for 13.2 kW?
- At 13.2 kW on 3-phase 400V, allow a dedicated three-phase breaker of 3×25 A and a dedicated 3-phase cable from your board. Have the installation checked by a qualified electrician before commissioning.
- Does the refractory vault need regular cleaning?
- The refractory vault is self-cleaning in normal use: topping residue that falls onto the vault burns and carbonises at high temperature. A light clean with a soft wire brush after full cooling (every 15-20 services) is enough to keep the vault clean and the radiant performance optimal.
