Elements in the stone vs full stone chamber (TR): two different philosophies
The MASTER44 and the XLP44TR are both top-tier 2-level ovens, but they solve different problems. The XLP44TR (€4,020) has a full refractory stone chamber on each level — vault, sole and walls — which gives excellent thermal inertia: the temperature drops little when the door opens. The MASTER44 (this model, €5,460) has elements integrated into the sole of each level — which gives absolute sole uniformity: every pizza bakes identically wherever it sits. The TR protects against temperature drops at opening. The MASTER guarantees a uniform sole. For a very intensive service with many openings, the TR can be preferable; for a pizzeria chasing the most perfect bake on each pizza, the MASTER is superior.
Durability of embedded elements
A key, often overlooked advantage of MASTER technology is the lifespan of the elements. In a conventional oven, the elements are exposed to the chamber: baking residue, moisture, peel knocks and the thermal shocks of door openings all age them. In the MASTER44, the elements are cast inside the stone, protected from all of that. The refractory stone itself may micro-crack slightly after years of intensive use, with no impact on thermal performance or on the embedded elements' lifespan. In daily use over two services, expect well over a decade of service.

The MASTER44 suits quality pizzerias of 50 to 80 covers that want MASTER baking on a doubled output without moving to a 6 or 9-pizza single deck.
