The MASTER 4-pizza pizza oven is in a class of its own within the electric range: its heating elements are cast directly into the mass of refractory stone, not laid on or under it. Sole and vault therefore heat as a monolithic block — the heat does not "travel" from the element to the stone, it is produced and diffused simultaneously throughout the mass. The result is absolute temperature uniformity across the whole baking surface: no hot spot near the elements, no cold spot at the edges or corners. It is the oven of the pizzaiolo who wants no variable in their bake.

Elements in the stone: why it is different

In conventional electric pizza ovens — including full-chamber XL Premium TR models — the electric elements are mounted on the surface of or beneath the refractory stone. Stone is an excellent heat accumulator, but it has moderate thermal conductivity: it takes time for the heat produced at the element to diffuse to the areas far from it on the sole. In practice, a standard oven's sole is slightly hotter near the elements (usually at the sides or centre) and slightly cooler at the edges and corners. For pizza, this means an uneven bake: the crust is perfect in the centre and less developed at the edges.

In MASTER technology, the elements are literally cast into the stone during manufacture. When the elements heat up, they heat the stone from within, uniformly across its whole surface, simultaneously, with no conduction differential. The MASTER sole is at the same temperature to the square millimetre, whether at the centre, the sides or the corners. For 4 simultaneous pizzas, the 4 individual soles under each pizza receive exactly the same heat — which is impossible in any other oven.

For which establishment

The MASTER4 is the choice of the restaurateur or pizzaiolo who makes pizza their signature product and tolerates no baking imperfection. It is the oven for fine-dining pizzerias, high-end Italian restaurants, or establishments competing in pizza contests. It is also the oven for those working delicate doughs (ultra-thin Neapolitan, Roman, or high-hydration) where sole uniformity is critical: an uneven sole bakes hydrated doughs unpredictably. The MASTER4 removes that variable.

In volume terms, the MASTER4 suits a pizzeria of 30 to 50 covers or a restaurant offering pizza as a premium option (30 to 40% of the menu). It is not the format for mass production — for that, the XL or XLP ovens are better suited. The MASTER4 is for quality, not quantity.

What restaurateurs ask

Is the MASTER baking difference really noticeable?
Yes, on delicate or high-hydration doughs. On a Neapolitan pizza at 75-80% hydration baked in 60-90 seconds at 450°C, the 5-10°C sole gap that exists in a standard oven makes the difference between a uniformly puffed dough and one whose outer edges are less developed. On a standard pizza (60% hydration) at 350-400°C with 4-6 minutes of baking, the difference is less noticeable. The MASTER4 is above all essential for fast, high-temperature bakes.
Is the MASTER4 harder to maintain than conventional ovens?
No — maintenance is identical to any refractory stone oven. The sole is cleaned with a soft wire brush after full cooling. The vault is self-cleaning in normal use. The advantage: as the elements are in the stone (not exposed to the chamber air), they are not accessible to carbonised deposits and need no specific cleaning. The lifespan of integrated elements is generally longer than that of conventional exposed elements.
Can the MASTER4 reach Neapolitan temperatures (450-500°C)?
Yes. Like every XL-range oven, the MASTER4 is designed to rise to 500°C. The MASTER difference is uniformity at that temperature: at 460°C, a MASTER sole is at 460°C everywhere. In a classic oven at 460°C, the sole can vary from 430 to 490°C depending on the zone. For Neapolitan, this uniformity is what guarantees a perfect 60 to 90-second bake of the whole pizza.
What stand should I plan for the MASTER4?
The MASTER4 measures 1100 × 1000 mm on the floor — slightly wider than the XLP4 (1000 × 960 mm). Check the compatibility of the stands available in our pizzeria accessories catalogue (some are designed for 1100 mm width). The ideal working height is between 800 and 950 mm from floor to sole level, depending on the pizzaiolo's size.
