Why do 10 levels change production?
A convection oven's capacity is measured in trays per batch. Each level = one GN 1/1 tray (530×325 mm) or one 600×400 mm tray. With 10 levels:

- How do you manage loading and unloading 10 levels in fast service?
- The FML1061 is a manually loaded oven — the 10 levels are loaded and unloaded individually. In practice, a production kitchen loads the oven outside peak hours and removes the preparations at service time. - Is the 102 cm height a problem under a standard hood?
- A 102 cm tall oven needs a hood positioned at least 115-120 cm from the floor for sufficient clearance. Professional kitchens with regulatory (HACCP) hoods generally allow enough height. To check during the technical survey before installation.

- The FML1061 can run with only a few levels loaded, but its warm-up takes longer and uses more energy than compact models.
