The FMT461 is the version of the FM461 convection oven with a built-in mechanical timer. Where the base FM461 leaves the operator to watch the finish time, the FMT461 handles it automatically: the timer shuts the oven off at the end of the set time, whatever attention is available at that moment. It is direct operational safety for multi-task kitchens where the cook runs several stations at once. Paired with a "Turbo UR" humidifier — more powerful than the manual unit of the base FM461 — the FMT461 is built for intensive bakery and pastry production.

Why the timer really changes things in a professional kitchen

In a high-throughput kitchen — artisan bakery in the morning, catering in the afternoon — the cook constantly juggles several cooks, customer calls and preparations to launch. Forgetting an oven is a daily reality: a batch overcooked by 5 minutes can ruin a whole tray of croissants. The mechanical timer of the FMT461 is a physical spring mechanism — robust, reliable, no electronics. It shuts the oven off after the set time. The digital timer (on the FMD models) does the same with a numeric display and minute precision. For professionals who prefer mechanical controls for their robustness and simple maintenance, the FMT461 mechanical timer is the right choice.
Can the FMT461 run without activating the timer?
Yes, the timer is an option you activate as needed. You can leave the oven running continuously (timer not armed) for long services or supervised cooking. The timer is not compulsory at every use.
What is the difference between the FM461 humidifier and the "Turbo UR" of the FMT461?
The FM461 has a manual humidifier for occasional activation: the operator injects steam when they decide. The "Turbo UR" of the FMT461 allows more active and more regular injection, suited to cooking that needs continuous steam at the start — particularly useful for tradition baguettes and high-hydration country breads.
Can two FMT461 units be stacked to double the capacity?
