The FM1443 forced-air convection oven is the entry point of the FM range for professionals who need a compact, robust and versatile oven. With 4 GN 4/3 trays at once, proven electromechanical controls and dimensions of 59 × 66 × 54 cm, it sits on a simple stand or a reinforced worktop without crowding the cooking line. It is the entry-level professional convection oven for establishments that need to bake viennoiseries, reheat dishes, cook gratins or prepare desserts quickly and consistently.
Forced-air convection vs conventional oven: why it changes everything in a professional kitchen
A convection oven forces the circulation of hot air with a fan. The difference from a traditional static oven is fundamental for catering production:
Faster cooking — forced air cuts cooking times by 20 to 30% compared with a static oven. A croissant that bakes in 18 min in a static oven bakes in 12-14 min in the FM1443. Over a bakery service with several batches, that gain adds up to extra production volume.
Even results across every level — in a static oven, the lower levels cook more than the upper ones (or the reverse depending on the heating system). In the FM1443, the forced-air circulation ensures an even temperature across all 4 levels at once. No need to turn the trays halfway or rotate the shelves to get uniform colouring.
Versatile applications — the FM1443 cooks in a single machine what would require several appliances in a static oven: viennoiseries, quiches, tarts, lasagne, whole poultry, baked potatoes, gratins, reheating of catering dishes. One piece of equipment, one set of skills, one maintenance routine.
FM1443 and the GN 4/3 format: understanding tray compatibility
The GN 4/3 format (530 × 325 mm) is the tray format that fits the FM1443. It is an intermediate format, wider than GN 2/3 (353 × 325 mm). For establishments already working with GN equipment, tray compatibility is direct.
Standard GN 4/3 trays — perforated trays, solid trays, non-stick trays and rimmed trays are all available in GN 4/3 across catering catalogues. The FM1443 also takes GN 4/3 grids for cooking poultry, fish or gratins in a dish.
4 levels at once — 4 GN 4/3 trays at once let you bake 4 batches simultaneously. For 70 g croissants placed 6 per tray, that is 24 croissants per 12-14 minute batch, i.e. around 100-120 croissants per hour — a cadence sufficient for a bakery-café or a viennoiserie corner in a restaurant.
Electromechanical controls: robustness in continuous service
The electromechanical controls of the FM1443 (dial thermostat, mechanical timer, fan selector) are the reference in professional catering for their robustness and ease of use:
No touch screen to protect — in a professional kitchen, controls take splashes, heat and humidity. A stainless dial and a mechanical thermostat stand up to real kitchen conditions far better than a digital screen. The FM1443 can be operated with gloves, in a rush, without memorising menus.
Immediate training — a new staff member understands how the FM1443 works in 5 minutes. Temperature, timer, on/off: three controls, zero complexity. No specific training, no documentation to read, no possible programming error.
Simple maintenance — the mechanical components (bimetallic thermostat, spring timer) have a long service life and can be replaced at low cost if necessary. Digital components (boards, displays, sensors) are more fragile and more costly to replace.
Which establishment
Bakery-café with a viennoiserie offer — the FM1443 is the basic equipment to bake croissants, pains au chocolat, apple turnovers and other viennoiseries throughout the day. 4 GN 4/3 levels let you work with trays on runners, the standard format of any bakery.
Restaurant with a versatile back-up oven — your kitchen already has a range but you need an extra oven for gratins, baked desserts, reheating the daily specials. The 59 cm wide FM1443 fits a compact space on a dedicated stand.
Catering on a controlled budget — canteens, cafeterias, modest hotels: the FM1443 offers the best performance/price ratio for medium-volume cooking with minimal maintenance and training.
Dark kitchen or caterer with varied cooking — quiches, savoury tarts, catering dishes to reheat, desserts: the FM1443 handles all of it across 4 simultaneous levels in a minimal footprint.

What restaurant owners ask
- What is the difference between the FM1443 and the FM1423?
- The FM1423 is the 48 cm wide model (vs 59 cm for the FM1443) that takes GN 2/3 trays (353 × 325 mm) instead of GN 4/3. The cooking surface per tray is therefore smaller — ideal if your space is limited in width or if you already work with GN 2/3 trays. The 59 cm FM1443 is the right choice if you work with standard GN 4/3 trays and have the available width. At an almost identical price, the choice comes down purely to the tray format you need and the space available.
- Can the FM1443 bake bread or baguettes?
- The FM1443 is a convection oven without steam injection. For leavened bread (baguettes, country loaves), steam at the start of baking is needed to obtain a glossy, well-developed crust. Without steam injection, bread baked in the FM1443 will have a more matte, less developed crust than in a traditional deck oven. For laminated viennoiseries (croissants, pains au chocolat), steam is not required — the FM1443 is perfectly suited. For classic bread-making, the FMI461 model with steam injection is more appropriate.
- Can the FM1443 be placed directly on a counter or is a dedicated stand needed?
- The FM1443 can be placed on a solid worktop (stainless steel, marble) able to support 25 kg with good heat resistance beneath the unit. A stand with adjustable feet is recommended to keep a 10-15 cm clearance under the equipment (underside ventilation, easier cleaning). Most restaurants install the FM1443 on the dedicated FM stand or on a neutral stainless cabinet designed for ovens of this size.
