Forced-air convection vs conventional oven: why it changes everything in a professional kitchen

A convection oven forces the circulation of hot air with a fan. The difference from a traditional static oven is fundamental for catering production:

Faster cooking — forced air cuts cooking times by 20 to 30% compared with a static oven. A croissant that bakes in 18 min in a static oven bakes in 12-14 min in the FM1443. Over a bakery service with several batches, that gain adds up to extra production volume.

Even results across every level — in a static oven, the lower levels cook more than the upper ones (or the reverse depending on the heating system). What is the difference between the FM1443 and the FM1423?
The FM1423 is the 48 cm wide model (vs 59 cm for the FM1443) that takes GN 2/3 trays (353 × 325 mm) instead of GN 4/3. The cooking surface per tray is therefore smaller — ideal if your space is limited in width or if you already work with GN 2/3 trays. The 59 cm FM1443 is the right choice if you work with standard GN 4/3 trays and have the available width. At an almost identical price, the choice comes down purely to the tray format you need and the space available.
Can the FM1443 bake bread or baguettes?
The FM1443 is a convection oven without steam injection. For leavened bread (baguettes, country loaves), steam at the start of baking is needed to obtain a glossy, well-developed crust. Without steam injection, bread baked in the FM1443 will have a more matte, less developed crust than in a traditional deck oven. For laminated viennoiseries (croissants, pains au chocolat), steam is not required — the FM1443 is perfectly suited. For classic bread-making, the FMI461 model with steam injection is more appropriate.
Can the FM1443 be placed directly on a counter or is a dedicated stand needed?
The FM1443 can be placed on a solid worktop (stainless steel, marble) able to support 25 kg with good heat resistance beneath the unit. A stand with adjustable feet is recommended to keep a 10-15 cm clearance under the equipment (underside ventilation, easier cleaning). Most restaurants install the FM1443 on the dedicated FM stand or on a neutral stainless cabinet designed for ovens of this size.
