The FM1423 forced-air convection oven is the most compact model in the FM range, at just 48 cm wide — 11 cm less than the standard FM1443. That difference may seem small, but in a professional kitchen where every centimetre of line length counts, 11 cm can be decisive in fitting an oven where the standard model does not go. It takes GN 2/3 trays (353 × 325 mm), slightly smaller than the GN 4/3 of the FM1443, for a slightly reduced cooking capacity in a very compact footprint. At a price almost identical to the FM1443, the FM1423 is the choice when space is the deciding factor.
48 cm wide: when compactness is the main constraint
In professional kitchens, the cooking line is often fixed — hoods, electrical connections, set positions. The 48 cm FM1423 was designed for situations where:
The cooking line has 48-50 cm of space left — after the range, the salamander and the other equipment, 50 cm remain free. The 59 cm FM1443 does not fit. The 48 cm FM1423 does.
The oven has to sit on a standard 40-50 cm neutral cabinet — some stainless neutral cabinets have a standard width of 50 cm. The FM1423 sits on them perfectly with minimal overhang.
The kitchen is open with a visual constraint — in some open-kitchen concepts, an over-wide appliance unbalances the look of the line. At 48 cm the FM1423 is visually more discreet than a 59 cm oven.
If you have the room for the FM1443 (59 cm), choose the FM1443 — its GN 4/3 cooking surface is larger. Choose the FM1423 only if the space constraint imposes a maximum width of 48-50 cm.
GN 2/3 vs GN 4/3: impact on output
The difference between the two tray formats is 177 mm in width (353 mm vs 530 mm). On a croissant tray:
GN 4/3 (FM1443) — around 6 croissants per tray × 4 levels = 24 croissants per batch.
GN 2/3 (FM1423) — around 4 croissants per tray × 4 levels = 16 croissants per batch, i.e. 33% fewer than the FM1443 at the same batch cadence.
For a high-volume bakery-café, that output difference is significant. For a restaurant with a back-up oven (reheating dishes, baking desserts in small quantities), it has no practical impact. The FM1423 is therefore recommended where the oven is a back-up or for moderate cooking, not as a high-throughput main production tool.
Which establishment
Small restaurant with a back-up oven on a tight line — your cooking line is full but you need an oven for finishing (gratins, desserts, reheating). The 48 cm FM1423 slots into the leftover space without changing the existing layout.
Bar or brasserie with a light snack offer — daily quiches, hot pastries, baked croque-monsieur: the FM1423 covers these uses in a compact format that does not encroach on the main line.
Tight prep corner or room-service kitchen — some hotels, holiday residences or clubs have a small kitchen for the morning service. The FM1423 fits in a culinary cupboard or on a 50 cm worktop with no layout changes.

What restaurant owners ask
- Does the FM1423 also take GN 4/3 trays if needed?
- No — the FM1423 is sized for GN 2/3 trays (353 × 325 mm). A GN 4/3 tray (530 × 325 mm) does not fit in a 48 cm wide oven. If you have GN 4/3 trays in your kitchen, either choose the FM1443 (59 cm) which takes them, or keep using GN 2/3 trays in the FM1423. Both tray formats coexist in catering — there is no problem having both in the same kitchen.
- Can two FM1423 units be stacked one on top of the other?
- Technically possible if both ovens sit on suitable stands and the height under the hood allows it. Most makers in this range offer stacking kits. Check the availability of the FM1423 stacking kit with our team before planning a double configuration — some models need a specific stand for safe stacking.
- What is the electrical consumption of the FM1423?
- The exact consumption is shown on the oven's rating plate and in its data sheet. For a compact 25 kg convection oven with electromechanical controls of this size, the rated power is generally 2.5 to 3.5 kW depending on the element configuration. Check the data sheet or contact us for the exact power before the electrical installation.
