The IRV50 spiral dough mixer is the 48-litre model of the single-phase 230V variable-speed raising-head range — the top of the series in single-phase supply. With 48 litres of bowl, 1500 W and a continuously adjustable variable drive, the IRV50 offers the maximum capacity and kneading precision available on a standard 230V socket with no three-phase installation. At €3,360 — €110 more than the IRV40 (41 L, €3,250) — the IRV50 is aimed at single-phase kitchens needing 30 kg/batch for their production volume and not wanting to trade off between capacity and precision.

48 L + drive in single-phase: the maximum with no 3-phase

In a kitchen whose installation is entirely single-phase 230V, the IRV50 represents the ceiling of what a spiral mixer can do on a standard supply. The 1500 W power is what allows the 48 litres to be worked properly: with an undersized motor, dense doughs in large quantity make the regime drop during kneading — a phenomenon that translates into uneven gluten development between the start and end of the batch. On the IRV50, the 1500 W holds the regime stable throughout, and the drive lets you precisely adjust that regime to the kneading phase.

The drive sets the IRV50 apart from the ITR502V (48 L 3-phase 2-speed, €3,185) on a key point: continuous adjustment versus 2 fixed positions. The ITR502V is 3-phase and offers two fixed speeds. The IRV50 is single-phase and offers a continuous range — you can set the speed to exactly 40% of the range for incorporating a very hydrated dough, 75% for the final kneading, 60% for a brioche. This granularity does not exist on fixed-speed models, and it is particularly useful on large quantities where the margin for kneading error has more impact.

The raising head on the 48 L format is the decisive operational factor: 30 kg of dough in a fixed bowl creates a constraint for daily work.
