The IBV50 spiral dough mixer is the top of the variable-speed fixed-head range in 230V single-phase: 48 litres, 1500 W, 480×850×850 mm format and 42 kg. At €3,000, it brings variable-speed precision — continuous control of gluten development, mastery of high hydrations, recipe-by-recipe adaptation — to a 30 kg-per-batch capacity. It is the mixer of the professional kitchen that refuses to choose between artisan precision and industrial volume, and wants both in single-phase.

1500 W to keep precision at scale

On 30 kg of dough, the 1500 W power is essential for the drive to express its full potential. At very low speed on a 30 kg mass, the resistance the undeveloped dough exerts on the spiral is significant. Without 1500 W, the motor could lose speed or heat up during this low-speed incorporation phase — which would precisely cancel the drive's benefit. With 1500 W, the motor holds its torque at all speeds, from the lowest to the nominal.

The drive's progression on 30 kg of dough follows the same logic as on small volumes, but with slightly longer durations: 5 to 6 minutes at very low speed for incorporation, gradual ramp over 4 to 5 minutes, then 12 to 15 minutes of full-speed development. This 22 to 26-minute cycle produces a dough with a complete, homogeneous gluten network across all 30 kg — the same quality from the first ball to the last.

230V single-phase at 48 litres: rare on the market

The difference is the configuration: the IBV50 has a fixed head and bowl (monobloc structure, repetitive production with no handling), the IRV50 has a raising head and removable bowl (full access for cleaning, portable bowl). If you do not need to remove or carry the bowl, the IBV50 is €360 cheaper. If bowl flexibility is a daily need, the IRV50 justifies the difference.
Can a 48 L single-phase 230V variable mixer run continuously for several hours?
Yes, with the usual precautions of any intensive-production equipment. The IBV50 is designed for continuous production — oil-bath motor for heat dissipation, robust stainless steel spiral, stable structure. In practice, a 2 to 3-hour prep session with 5 to 6 consecutive batches is well within the machine's capabilities. Leave a 2 to 3-minute interval between batches for loading/unloading — this short delay is enough to dissipate the heat accumulated during kneading.
