- Why choose the ITR40 (1 speed) over the ITR402V (2 speeds, +€365)?
- If you work a single dough recipe or if your recipes all have similar hydrations and kneading times, the single-speed ITR40 is enough. The ITR402V's 2nd speed is useful when alternating very different recipes in the same service — a classic pizza dough (55-60% hydration, fast kneading) and a Neapolitan dough (65-72% hydration, gentle incorporation). If you do not change recipe mid-service, the €365 difference is not justified.
