18 MASTER pizzas: uniformity at industrial scale
On a 1460 × 1360 mm sole (about 2 m²), the MASTER elements are cast into the mass of refractory stone across the whole surface. There is no area closer to or further from the heat source. Each of the 9 pizza positions per level receives exactly the same heat output from the sole — something physically impossible to achieve with elements laid on or under the stone. As a result, the pizzaiolo can run 18 pizzas at once as if running a single one: one baking time, one temperature, 18 identical pizzas.
At 10 to 12 batches an hour across both levels managed in staggered mode, the MASTER99 can produce 180 to 216 perfect pizzas an hour. Over a full 3-hour service, that is 540 to 650 pizzas — all of identical quality, from the first to the last. - The XLP99TR offers maximum thermal inertia (full chamber) at a lower price. The MASTER99 offers absolute sole thermal uniformity over 9 pizzas per level — something the XLP99TR cannot guarantee with conventional elements on a 1460 × 1360 mm sole. If your main criterion is resistance to thermal shocks (very intensive service with many openings), the XLP99TR is enough. If your criterion is perfectly identical baking across all sole positions at 18 pizzas per batch, the MASTER99 is the only oven that meets it.
- What electrical installation is needed for 28.8 kW 3-phase?
- A dedicated three-phase breaker of 3×50 A and a 3-phase cable of at least 16 mm² section from your main board. Have the installation done by a qualified electrician. Check with your utility the available power of your contract: 28.8 kW continuous is a very large draw, often beyond standard catering contracts. A higher-tariff or medium-voltage contract may be needed for very large installations.
