The FMC523 is a compact combi-steam oven with electromechanical controls, with 5 levels in the GN 2/3 format (354 × 325 mm). It stands out in two ways in the combi range: by its tray format (GN 2/3 rather than GN 1/1) and by its 60 cm width — between the 52 cm Slim combis and the 87 cm standard combis. For professional kitchens whose carrying equipment is standardised in GN 2/3 and whose available space is between 55 and 70 cm, the FMC523 is the natural solution.

GN 2/3 vs GN 1/1: why the tray format changes everything

The tray format of a combi oven is rarely a minor choice. It determines which dishes, pans and accessories you can use directly in the oven:

GN 2/3 (354 × 325 mm) — the standard of retail pastry, caterers working in individual portions and kitchens whose Gastronorm pan stock is in 2/3 format. Compact, light, easy to handle when loading an oven.

GN 1/1 (530 × 325 mm) — the standard of collective catering and the classic restaurant kitchen. Larger, heavier, but compatible with the standard cook-chill pans used by most preparation suppliers.

If your kitchen already uses GN 2/3 pans and you do not want to invest in a new GN 1/1 pan stock, the FMC523 lets you work directly with your existing equipment. Frequently asked questions about GN 2/3 combi ovens

Can GN 1/1 pans be used in the FMC523?
No. The rails and cavity of the FMC523 are sized for GN 2/3 grids (354 × 325 mm). A GN 1/1 pan (530 × 325 mm) would not fit the rails. If you need to work with both formats, either use two separate ovens or choose the FMC516 (GN 1/1) with adapters for GN 2/3.
Is the steam quality different in a 60 cm oven vs an 87 cm one?
Steam quality depends on the generator technology (direct injection vs boiler), not on the cavity width. A well-designed 60 cm oven produces steam of the same quality as an 87 cm one. The difference is that the smaller cavity reaches steam saturation faster — which can be an advantage for short cooking.
Is the FMC523 suitable for artisan bread?
Yes, with some nuances. The combi mode of the FMC523 suits special breads and viennoiseries well. For high-hydration tradition bread needing a massive steam injection at the start of baking, a deck oven or a combi with a high-power humidifier is more suitable. For croissants, brioches and Vienna breads, the FMC523 gives excellent results in combi mode.
