The FMC516 is the entry-level standard combi-steam oven: 5 levels GN 1/1 + 600×400 mm, 87 cm wide, electromechanical controls. It is the first full-size model in the FMC range — where the Slim combis (52 cm) and the FMC523 (60 cm, GN 2/3) are designed for constrained spaces, the FMC516 is built for kitchens that have the standard space and want a versatile, robust, simple-to-use combi. Its dual tray format (GN 1/1 and 600×400 mm) makes it compatible with practically all the carrying equipment of a professional kitchen.

The standard combi: why do 87 cm of width make the difference?

Compared with the Slim (52 cm) and compact (60 cm) formats, the 87 cm cavity of the FMC516 brings concrete advantages:

More even steam distribution — in a wider oven, the steam has more volume to spread around the grids. The edges of GN 1/1 pans get as much steam as the centre — critical for long steam cooking (vegetables, fish, reheating).

Better air circulation — convection is more even in a wider cavity. Cooking gaps between centre and edges are reduced, and the 5 levels cook more evenly at once.

Ergonomic grid access — loading a full GN 1/1 pan into an 87 cm oven is more comfortable than into a 52 or 60 cm one. In intensive production, this means less fatigue and less risk of spilling.

Why choose an electromechanical combi over a touch one for standard catering?
For classic catering where recipes do not change often, where staff are stable and trained, and where robustness matters more than sophistication, electromechanical controls are an excellent choice. They are simple to master, resistant to intensive use, easy to repair and need no specific digital-interface training. The lower cost (cheaper than the FMCT516) is an added argument for budget-controlled establishments.
Can the FMC516 cook in combi mode (steam + convection) on 5 levels at once?
Yes. The combi mode of the FMC516 combines steam and convection at the same time across the whole cavity — the 5 levels cook in the same steam+heat atmosphere. The steam proportion and the temperature are set by the dials before launching the cycle.
What is the typical life of an electromechanical combi in intensive use?
A well-maintained professional combi has a life of 10 to 15 years in intensive use (8h/day, 5-7 days/week). Electromechanical-control ovens tend to last slightly longer than digital models in intensive production kitchens, because their mechanical components are less sensitive to humidity and heat than electronic ones. Preventive maintenance (descaling, seals, fan) is the key to longevity.
Does the FMC516 need a hot or cold water connection?
The water supply for a combi oven is generally cold water (ideally 6-15 °C) — the oven heats the water itself to produce steam. Water that is too hot at the inlet can disrupt steam regulation. Water hardness (TH) matters: very hard water (>25°F) needs a softener to protect the steam generator.
