The FMEC1011M is the highest-capacity Slim combi-steam oven with electromechanical controls: 11 levels GN 1/1, four complete cooking modes, on an ultra-compact format only 52 cm wide. It is the culmination of the electromechanical Slim series: maximum capacity for kitchens that cannot give up extra width but whose production volume is that of a large establishment. At 115 cm tall, it uses nearly all the available vertical space in a kitchen — but its floor footprint stays that of a domestic refrigerator.
11 levels on 52 cm: the paradox of the Slim range
The Slim combi range was born from the observation that width-constrained kitchens should not sacrifice their production capacity. The FMEC1011M pushes this principle to its maximum:
11 levels GN 1/1 on 52 cm wide = 175% more capacity than a 4-level Slim on the same floor footprint.
Compared with two FMEC711M (+104 cm wide), a single FMEC1011M offers slightly more capacity on one 52 cm footprint — saving floor space and a second installation.
Compared with a standard 11-level combi (90 cm wide), it recovers 38 cm of worktop width — the equivalent of a whole prep zone.
The choice of electromechanical controls is deliberate. On an 11-level oven in intensive use, mechanical robustness is a longevity factor: no digital panel or touch screen to replace after 5 years of intensive use, simple dials repairable locally, a technology mastered by every certified technician.
Who is the FMEC1011M for?
Central kitchens of collective catering renovated in old, space-limited premises: the FMEC1011M keeps an industrial production capacity without enlarging the premises.
Large hotels in constrained space (Parisian or urban hotel kitchens where every m² is precious) producing for 150 to 300 covers per service: the 11 levels handle the whole service from a single 52 cm appliance.
Industrial caterers in shared kitchens (cloud kitchens, shared kitchens) renting limited-area spaces and needing to maximise production per m².
Food franchise operators bound by imposed kitchen footprints (franchises with strict layout standards): the Slim 11-level goes where a standard combi cannot.

Frequently asked questions
- Is the 115 cm height a problem for the kitchen hood?
- A 115 cm tall oven is compatible with standard professional hoods installed at 2 m from the floor (85 cm clearance). If your hood is lower or the FMEC1011M sits on a raised stand, the total installation height can exceed 150-160 cm and need a hood adaptation. To check during the technical survey before installation.
- How do you load the 11 levels ergonomically?
- On a 115 cm tall oven, the top 3 levels are above 85-90 cm — a position that can be uncomfortable for loading heavy pans. A common solution is to install the oven on a lowered base (40-45 cm) to bring the top levels to an ergonomic height. Some operators reserve the high levels for light products (vegetables, viennoiseries) and the low levels for heavy pans.
- Can the FMEC1011M replace two 4 or 7-level Slim combis?
- In raw capacity (11 levels vs 4+4 = 8, or 7+4 = 11), the FMEC1011M is comparable to two combined ovens. The advantage is one footprint, one connection, one maintenance. The downside is reduced flexibility: two ovens can cook two different recipes at different temperatures at once, whereas the FMEC1011M imposes a single atmosphere over the 11 levels. For kitchens with many simultaneous recipes at different temperatures, two separate ovens stay more flexible.
- Does the FMEC1011M need special electrical power?
- An 11-level combi uses significantly more energy than a 4-level one: more powerful heating elements, a steam generator sized for the larger cavity. A three-phase (400 V) connection is very likely — to confirm with the exact technical specifications. Contact us before ordering.
