Dry GN Holding vs Bain-Marie: Which to Choose

This heated GN display uses dry radiant heat, ideal for products that should stay crisp or firm — breaded items, roasts, gratins, baked dishes. For sauced and moist dishes that must not dry out — curries, stews, sauced meats, rice — a bain-marie (humid heat) is the better choice. High-volume operations often run both side by side: a bain-marie for sauced dishes and a dry GN display for crisp or baked items, matching the heat type to each food.

What Buyers Ask

What does the sliding rear door change in service?
The rear door lets staff replenish and serve from behind the unit, without reaching across the customer-facing display. In a high-volume self-service or buffet, that keeps the front presentation tidy and the service flowing while GN trays are swapped from the back.
Does it need a three-phase supply?
No — at 3kW it runs on single-phase 230V and plugs into a standard socket, with no three-phase installation, despite its high-volume capacity.
