Dry GN Holding vs Bain-Marie: Which to Choose

This heated GN display uses dry radiant heat, which suits products that should stay crisp or firm — breaded items, roasts, gratins, baked dishes. For sauced and moist dishes that must not dry out — curries, stews, sauced meats, rice — a bain-marie (humid heat, refs 900/902/903) is the better choice. Many kitchens run both: a bain-marie for sauced dishes and a dry GN display for crisp or baked items. Match the heat type to the food.
