Unlike counter display cabinets (designed for presentation or compact storage), the holding cabinet is a high-capacity kitchen unit: its 6 large 460×660 mm trays store significant volumes of production awaiting service, accessible from both sides for optimised kitchen/service organisation. It is the equipment of high-cadence fast-food restaurants that cannot afford a single product stock-out during service.

How it works and specifications

The 6-tier holding cabinet operates like a warm-holding oven: an electric heating element maintains the interior space at the set temperature (50–90°C) continuously. The 6 large removable trays (460×660 mm) allow storage of significant volumes — several kilos of fried chicken, trays of fries, complete preparations on hold.

  • 6 trays 460×660 mm: large professional trays designed for high quantities. A single tray can hold several kilos of breaded chicken or multiple portions of fries simultaneously.
  • Front and rear access: kitchen team loads trays from the rear (from the cooking station), service team retrieves products from the front (dining room or counter side). Natural production flow organisation.
