The 1-metre 6-tray hot holding cabinet is the most widely used warm-holding display in chicken fast-food restaurants. The 1M cabinet is the standard configuration for professional fried chicken kitchens: large enough to hold 2 to 3 batches in reserve, with double-side opening for smooth service on both sides of the counter, and an adjustable thermostat to adapt the temperature to each product type. It is compatible with all pressure fryers in our range and with most brands on the market.
How it works and specifications
The 1M cabinet keeps your products between 50 and 90°C continuously. Its 6 storage trays (3 upper, 3 lower) allow you to organise your production by product type or by batch time — freshest chicken on top, oldest at the bottom, for natural rotation and maximum freshness. The double-side opening allows the kitchen team to load the cabinet without disrupting front-of-house service.
- 6 storage trays: 3 upper + 3 lower levels. Optimal organisation by product type (thighs, fillets, wings, tenders) or by batch time. Each tray holds several kilos of product simultaneously.
- Double-side opening: the team can load from the rear (kitchen side) while service continues from the front (counter side). Maximum service flow during peak hours — no interruption, no heat loss.
- 50–90°C thermostat: adjustable by product type. Breaded chicken: 65–75°C recommended. Wings and tenders: 60–70°C. Precise control means no overheating and no premature drying.
- Low energy consumption: only 0.77 kW — one of the most energy-efficient units in the range. Running costs are minimal even for operations open 12+ hours per day.
- Food-grade AISI 304 stainless steel: body and trays in stainless steel, easy to clean, built for intensive daily professional use. HACCP-compliant surfaces throughout.
