The Diamante 70 D73/10KBEF electric braising pan is the 21-litre fixed-tank format of the range: 8.1 kW on three-phase 400V, with no tilting system, in the compact 600 mm profile of the Diamante 70 line. It targets restaurants of 40 to 60 covers preparing 1 to 2 sauced dishes of the day per service without needing the capacity of a 43 or 50-litre tilting pan.
For which establishment, for which service?
- Small restaurant and brasserie: producing 30 to 40 portions of a sauced dish (braised beef, roast chicken in sauce, curry), then serving by ladle from the tank. The 8.1 kW power holds the temperature perfectly in service with no overheating cycle.
- Boutique hotel and inn: quality cooking in small volume (20 litres is enough for a 30 to 40 cover service with sauce). The Diamante 70 line fits into a compact hotel kitchen range.
- Chef developing recipes or test kitchen: the 21 L pan is the right volume to test recipes in semi-industrial quantity (10 to 30 portions) without tying up a 50-litre pan.

- Why choose a fixed tank rather than a tilting tank on a professional braising pan?
- The fixed tank is simpler, more robust and cheaper than the tilting tank. It is perfectly suited when preparations are served by ladle or spatula — sauces, thick soups, risottos, vegetables. The tilting tank is useful when you must transfer all the contents at once into a gastronorm pan or container, typically for catering distribution or packing into trays.
- 21 litres — is that enough for a 50-cover restaurant?
- For a single sauced dish of the day with a 200 to 250 mL sauce portion per plate, 21 litres covers 80 to 100 portions. For 50 covers, it is amply sufficient — and you will even have margin. The volume becomes limiting if you prepare several different sauces at once or if your menu has several sauced dishes at the same service.
