The PFPG6 gas pizza oven combines the two strengths of the Smart range: a fully refractory-stone cooking chamber (sole, walls and vault) and a weight of 77 kg — where the equivalent full-chamber GXL6 weighs 125 kg. For a pizzeria on an upper floor, in a basement or in a hard-to-access kitchen, the PFPG6 is the only gas option uniting full-chamber performance with the lightness needed for installation with no major logistical constraint. At 450°C and 21.5 kW, it heats up as fast as an XL and holds its heat in continuous service.

For which pizzeria, which service?

  • Established pizzeria on an upper floor or basement (60-100 covers): 6 pizzas in a full stone chamber = 65 to 85 pizzas/hour. Combined with the 77 kg weight, it is the 6-pizza gas oven for hard-to-access premises. The alternative would be a 6-pizza electric oven (generally lighter) but with higher running costs.
  • Delivery + dine-in pizzeria in a restricted space: 1000 mm wide leaves more room than an XL (1100 mm). Over 100 mm more in a narrow kitchen, it is sometimes the difference between comfortable access and a cramped post for the pizzaiolo.
  • Pizzeria opening in renovated premises (upper-floor building): floor-load constraints in older buildings (150-250 kg/m²) are more easily met with 77 kg than with 125 kg for the same oven footprint. An architect or design office can validate the load on your specific structure.
  • Gourmet restaurant with a compact pizza section: 6 pizzas at once in a full chamber = premium cooking quality in a 1000×1360 mm footprint. For a restaurant that values quality over volume, the PFPG6 offers the best cooking per m² occupied.

The PFPG6 is 48 kg lighter AND cheaper than the GXL6. The power gap (1.5 kW) is negligible in practice. The choice between the two is made on the installation constraint and the kitchen layout.

21.5 kW vs 23 kW: is the difference real in cooking?
In normal service (up to 80 pizzas/hour), the difference is imperceptible: both ovens hold 380-420°C in a full chamber with equal stability. The difference only shows in extremely intense service (non-stop succession, door opening every 90 seconds) where the GXL6's extra 1.5 kW allows slightly faster recovery. For 95% of pizzerias, the PFPG6 at 21.5 kW is perfectly sufficient.
How do I estimate the floor load for my premises before buying?
The floor load of a 77 kg oven on a 30 kg stand rests on a surface of about 0.12 m² (the stand's footprint). The floor pressure is therefore about 880 kg/m². Most reinforced-concrete slabs in commercial premises support 500 to 1500 kg/m². If in doubt about an old structure or a wooden floor, have it checked by a structural engineering office before installation — the mandatory step for any heavy professional equipment.
Can this oven be used for dough other than pizza (bread, focaccia, calzone)?
Yes. The full refractory-stone chamber is ideal for anything that benefits from direct stone cooking at high temperature: focaccia, calzone, Neapolitan bread, and also some desserts (tarts, galettes). The adjustable temperature lets you adapt cooking to the product. In practice, most professional pizzerias use their ovens outside services for pre-bakes or side production.
