The Cold Pizza Dough Roller 2 Rollers Ø300 is the quality version of the cold range for pizzas up to 30 cm. Where the 1-roller Ø300 (€960) makes a single pass to form the dough ball, the 2-roller passes the dough through two successive sets of rollers: the first spreads the dough ball, the second refines and evens out the thickness over the whole surface. At €1,320, i.e. €360 more than the 1R Ø300, it is the choice for the pizzeria that produces at a high cadence and wants every pizza to come out with the same thickness, from centre to edge, service after service.
2 rollers: the difference in consistency at high cadence
The added value of the second roller is visible in use: with 1 roller, the first pass spreads the dough ball but can leave slightly thicker zones at the centre if the dough ball was not perfectly spherical to start with. With 2 rollers, the second pass compensates for these variations: the dough ball comes out with a homogeneous thickness over its entire surface, whatever the initial regularity of the balling. Over 200 pizzas per service, this consistency translates into a more uniform baking time (thick and thin pizzas do not bake at the same speed) and a more regular presentation.
The height of the machine (660 mm vs 430 mm for the 1R Ø300) is the only dimensional difference — the width (480 mm) and depth (380 mm vs 340 mm for the 1R) stay compact. The 2 sets of rollers are stacked vertically inside the housing, which explains the greater height. The weight (28 kg vs 18 kg for the 1R) reflects the more complex mechanics while remaining movable.
The process stays entirely cold: the dough passes between the rollers without any heat source. Fermentation is not interrupted, the gluten stays active, the result is artisan in the dough structure — only the thickness is mechanically regularised. For thin, crispy-crust pizzas (contemporary Neapolitan style, Roman) where every millimetre of thickness counts on the bake, the 2-roller offers a precision that the 1-roller cannot systematically guarantee.
Which establishment
The cold roller 2 rollers Ø300 is the model for the pizzeria demanding on consistency at high throughput. A 60-100 cover pizzeria producing 150-200 pizzas per service: the consistency of the second roller makes a real difference on the consistency of the product served and on control of the baking time. A restaurant that forms its pizzas in batches (preparation in advance): the regular bases from the 2R keep better cold and bake homogeneously in service.
If your pizza diameter exceeds 30 cm, the 2-roller Ø400 model (€1,440, +€120) is the option with the large format. If your production volume is moderate and the slight variations of the 1-roller are acceptable, the 1R Ø300 (€960, -€360) is sufficient. If you need both the large format and the 2-roller quality, the 2R Ø400 at €1,440 is the model that combines both advantages.

What restaurant owners ask
- Does the 2-roller produce a thinner pizza than the 1-roller?
- No — the final thickness depends on the roller-gap setting, not on the number of rollers. On both models, you set the gap to obtain the desired thickness (thin, medium, thick). What the second roller brings is uniformity at that chosen thickness: the disc comes out with the same thickness everywhere, where the 1-roller can leave a slight variation between centre and edges. So you can obtain a thin pizza with the 1R just as with the 2R — the 2R simply produces it more regularly.
- Is maintenance of the 2-roller more complex than the 1-roller?
- Daily maintenance is identical: cleaning the rollers and the dough-pass zone after each service (scraper + damp cloth), weekly check of the mechanical play. The second set of rollers represents mechanically twice as many parts in contact with the dough, but the cleaning access zones are designed to stay accessible. Maintenance takes about 5 minutes more than a 1-roller — negligible compared to the benefit on product consistency.
