The Cold Pizza Dough Roller 1 Roller Ø450 is the large-format version of the cold 1-roller range. Where the Ø300 model (€960) covers individual pizzas up to 30 cm, the Ø450 goes up to 45 cm — a format that covers large rectangular al taglio pizza, Roman teglia, family-size pizzas and large sharing pizzas. At €1,150, i.e. €190 more than the Ø300 for the same 1-roller mechanism, it is the choice for the pizzeria whose menu includes formats beyond the standard 30 cm.

Ø450: the large format without compromising on the process

Moving up to the Ø450 from the Ø300 does not change the operating principle — 1 roller, cold process, same shaping speed — but it changes the range of pizzas you can produce. A Ø450 lets you form a 33-35 cm pizza (the most widespread format in French table pizzerias) with more margin than a Ø300: the dough ball passes without being constrained by the edges of the roller, giving a cleaner result on pizzas close to the diameter limit. For 40-45 cm pizzas (large sharing format), the Ø300 simply cannot do the job — the Ø450 is the only 1-roller model that covers this need.

The width of the machine (650 mm vs 480 mm for the Ø300) is the direct consequence of the larger format: the rollers are longer to take a more spread-out dough ball. The weight rises from 18 kg to 27 kg — more stable on the worktop, but still movable by one person. The depth footprint (350 mm) stays the same as the Ø300, which allows installation on a 40-60 cm deep worktop.

For al taglio pizza (sold by the slice, on a rectangular tray), the Ø450 roller lets you form large rectangular trays by passing the dough ball in two or three passes at different angles — a common use in by-the-slice pizzerias that mechanise their production. The result is not perfectly rectangular (the roller produces an oval or a disc), but it gives a more regular base than hand-shaping, which is then finished by hand in the baking tray.

Which establishment

The cold roller 1 roller Ø450 is the choice for the pizzeria whose pizza format exceeds 30 cm. A counter pizzeria (by-the-slice pizzeria, kebab-pizza, fast restaurant) making 33-45 cm pizzas at high throughput: the Ø450 roller mechanises the shaping of every menu format without exception. A restaurant offering family pizzas (40-45 cm) in addition to the individual format: a single Ø450 model covers both formats, where a Ø300 covers only the small one.

If your pizzas do not exceed 30 cm and you are looking to optimise the budget, the Ø300 model (€960, -€190) is sufficient. If you want perfectly uniform thickness on the large format, the 2-roller Ø400 model (€1,440) is the quality step above — 2 passes for superior uniformity on large pizzas.

Can the Ø450 roller form rectangular pizzas for by-the-slice sale?
The cold roller forms discs or ovals, not rectangles. For al taglio pizza on a rectangular tray, the technique is to make 2-3 passes 90° apart to progressively spread the dough ball, then place it in the baking tray and finish the spreading by hand to fill the corners. The final result is rectangular (dictated by the mould), but the roller does most of the flattening work — it significantly reduces shaping time even for this format. Some al taglio pizzerias use the roller solely for this intermediate stage.
Is the difference in result between the Ø450 1-roller and the Ø400 2-roller visible on the pizza?
On the final baked result, the difference is subtle for an untrained observer. The 2-roller produces a more uniform thickness over the whole disc surface — noticeable mainly on the zones near the centre and on edge regularity. For a high-throughput pizzeria where each pizza must be identical to the previous one, the 2 rollers make the difference on consistency. For a pizzeria with moderate production where slight thickness variations are accepted, the 1-roller Ø450 produces a largely satisfactory result at €290 less than the 2R Ø400.
