The double gas crêpe maker is the reference crêpe station for crêperies that produce at high volume and have access to gas. Two Ø 40 cm round plates, 6 kW of heat output, bottled propane or town gas — it lets a single cook reach 60 to 80 crêpes per hour thanks to direct gas heat and its immediate thermal recovery. At the same price as the double electric (€690 excl. VAT), it is the natural choice in active crêperies with a gas supply available: same capacity, better thermal responsiveness, lower energy cost under intensive use.

For which establishment?

  • Active Breton crêperie serving galettes and crêpes: buckwheat galettes need fierce heat and fast recovery between each one — the direct gas flame is the historic choice of Breton crêperies for this reason. The double gas lets you serve savoury galettes (main) and sweet crêpes (dessert) in parallel, on two plates at different temperatures.
  • Snack with strong crêpe-galette demand at peak: when crêpes are 30% or more of orders over the lunch hour, a single plate creates a queue. The double gas absorbs peaks by keeping both plates at optimal temperature at all times.
  • Event caterer with a gas supply: for indoor events with a gas-equipped kitchen, the double gas crêpe station installs and starts in under 5 minutes. The propane bottle also lets it run with no fixed network for outdoor events.

Why gas is preferred in intensive crêperies

At two plates and 6 kW, the difference between gas and electric is clearly felt in intensive service:

  • Initial heat-up: gas heats both plates in 6 to 10 minutes at start-up versus 12 to 18 minutes for electric. In all-day service with a morning start, that is 5 to 10 minutes saved every day.
  • Recovery between galettes: a cold buckwheat galette placed on the plate creates a thermal shock — the plate loses 20 to 40°C locally. Gas compensates this drop immediately (the flame rises in intensity), while electric takes tens of seconds to make up the gap. At a pace of 60–80 galettes/hour, this fast gas recovery avoids stuck or undercooked galettes that result from an insufficiently hot plate.
  • Energy cost: gas is generally cheaper than electricity in France per useful kWh. For 6 hours of intensive daily service, the energy cost difference between gas and electric can represent several hundred euros of annual saving.

That said, if the premises have no gas supply and a network would have to be created, the installation cost may cancel this advantage — in which case the double electric (€690 excl. VAT, same price) is the direct answer.

6 kW gas on 2 plates: propane and town gas

The two plates run independently on two separate burners. Each burner is individually adjustable — plate 1 at 200°C for sweet crêpes, plate 2 at 240°C for savoury galettes, at the same time. The supply is bottled propane or town gas depending on the chosen configuration:

  • Bottled propane: full autonomy, ideal for mobile uses or crêperies with no gas network. One 13 kg bottle per burner, or a T-feed from a single bottle for both burners.
  • Town gas: after conversion (injector change by a gas plumber), the crêpe maker connects to the kitchen's natural gas network. Continuous supply with no bottle management.

The gas 400 × 200 mm crêpe maker (€670) is €20 less but has only one plate. For a high-volume crêperie with gas available, the extra €20 of the double immediately justifies the second plate and the doubled capacity.

What restaurateurs ask

Is the double gas better than the double electric for buckwheat galettes?
For buckwheat galettes at high pace, yes. The buckwheat galette is thicker and colder when loaded than the wheat crêpe — it creates a larger thermal shock on the plate. The immediate thermal recovery of gas (the flame rises instantly) cuts the reheat time between two galettes and avoids stuck galettes on an insufficiently hot plate. Traditional Breton crêperies mostly use gas for galettes for this reason. On thin sweet crêpes at moderate pace, the difference between gas and electric is less noticeable.
Can both plates be connected to the same propane bottle?
Yes, with a T-coupling and a flow regulator matched to the sum of the two burners. This configuration feeds both plates from a single bottle — simpler to manage, but consumption is doubled. On a 13 kg propane bottle, autonomy is halved versus a single plate. For intensive daily use (6+ hours of service on both plates), keeping several rotation bottles or connecting to town gas is recommended.
Is town-gas conversion simple on a double crêpe maker?
The procedure is the same as for a single crêpe maker: replacing the two injectors (one per burner) with injectors calibrated for the natural-gas network pressure (20 mbar in France). A qualified gas plumber does this in 30 to 45 minutes — a standard job. After conversion, the crêpe maker connects directly to the kitchen's gas network. The job cost (labour + injectors) is generally under €150.
Is a permit or specific certification needed to use gas in a professional kitchen?
The use of gas in a professional kitchen is governed by fire safety regulations (ERP) and gas installation standards. Installing a gas appliance on a fixed network must be done by a qualified professional (RGE or ATG certification in France). For bottled propane, the ERP storage rules apply (limited quantities, mandatory ventilation). No special certification is required for the operator of the crêpe maker itself — only mastery of how the appliance works.
