The professional 400 × 200 mm gas crêpe maker is the fully equipped model of the gas range — electronic ignition, temperature regulator and a full stainless-steel build. Compared with the single gas crêpe maker (€390, Ø 39.5 cm, no regulator), it offers a wider rectangular plate format, match-free ignition and precise temperature control. At €670 excl. VAT, it is for crêperies in a fixed installation that use gas intensively and want the professional appliance with all features built in.

For which establishment?

  • Crêperie in a fixed installation with a gas supply: electronic ignition and the built-in temperature regulator simplify daily service — no more matches, no more rough eyeballed setting. The regulator holds the plate at the chosen temperature continuously, even outside service peaks.
  • Restaurateur producing buckwheat galettes at high pace: direct gas heat, with immediate recovery between galettes, is the main advantage for thick galettes that absorb a lot of heat. Electronic ignition lets you relight the burner quickly after an accidental extinction.
  • Professional kitchen in intensive daily use: the stainless build and 14 kg weight signal a robust construction sized for professional use several hours a day. The ergonomic handles make moving and removing the plate for end-of-service cleaning easier.
  • Establishment that values professional finish: the stainless structure, ergonomic handles and electronic ignition give the appliance a visibly professional look — a presentation argument for open kitchens or service counters in contact with customers.

Electronic ignition and temperature regulator: what they change day to day

The two key features that set this crêpe maker apart from the entry-level gas model:

  • Electronic ignition: start-up is a simple button press. No match, no lighter, no exposure to the flame for ignition. In active service with frequent pilot openings and closings, electronic ignition cuts handling and the risk of accident during quick relights.
  • Temperature regulator: the plate temperature is held automatically at the set point. Without a regulator, the cook must manually adjust the gas flow to the plate temperature — a rough exercise that depends on experience. With the regulator, the plate stays at target temperature even during service lulls or gas network pressure variations.

These two features reduce the learning curve: a less experienced operator gets consistent results faster than with a gas crêpe maker without a regulator.

400 × 200 mm plate and stainless build

The rectangular plate, 400 mm wide and 200 mm deep, offers an 800 cm² cooking surface — enough for a large wheat crêpe (35 cm across) or a complete buckwheat galette. The 200 mm depth is more generous than square or narrow plates — it gives room for the rozell when spreading the batter.

The stainless-steel structure (chassis, handles, feet) resists professional cleaning agents, humidity and the frequent thermal variations of a kitchen environment. The 14 kg weight ensures stability on the worktop during plate handling. The ergonomic handles let you remove the plate for end-of-service cleaning with no tool — an advantage for daily hygiene.

The gas 400 × 200 mm crêpe maker is €670 — only €20 less than the double gas (€690). The choice between the two depends on the need: if the pace requires two plates at once, the double is worth the extra €20. If a single plate is enough but electronic ignition and a regulator are priorities, this model is the most equipped single-plate option.

What restaurateurs ask

Is the €670 gas crêpe maker worth €280 more than the €390 single gas?
It depends on the use. The single gas (€390) has no regulator or electronic ignition — it is perfect for occasional use or as a menu complement. The €670 adds electronic ignition (more safety and speed), the temperature regulator (consistency with no supervision), the larger rectangular format (400 × 200 mm vs Ø 39.5 cm) and the full stainless build with handles. For intensive daily use in a crêperie, these features cut operator time and improve consistency — a direct justification of the price difference in daily professional use.
Does the temperature regulator work as well as on an electric crêpe maker?
The principle differs but the result is comparable in practice. On an electric crêpe maker, the thermostat measures the plate temperature and cuts or relights the element. On gas, the regulator adjusts the burner flow — the response is more analogue than digital, but precise enough to hold the plate within a 10 to 15°C range of the set point. Professional cooks adapt quickly to the slight inertia of gas: with a direct flame, temperature recovery after a cold crêpe is faster than with electric, which offsets the less precise setting.
Can this crêpe maker be converted from bottled gas to town gas?
Yes, like all the gas crêpe makers in the catalogue. Conversion from bottled propane to town gas (methane) requires an injector change suited to the natural-gas network pressure (around 20 mbar for the urban network vs 28–30 mbar for propane). This is done by a qualified gas plumber in about 30 minutes. Once converted, the crêpe maker connects directly to the kitchen's town-gas network.
Does the stainless build need specific maintenance?
Stainless steel is easy to maintain in a professional kitchen: cleaning with a damp cloth and a neutral degreaser, immediate wiping of acidic splashes (lemon, vinegar) which can leave marks on stainless if they dry. The cooking plate itself (cast iron) is cleaned by scraping with a wood or plastic spatula while hot at end of service, then wiping. Avoid acidic or abrasive cleaners on the cast iron which risk damaging the plate's natural seasoning.
