The crêpe accessory kit brings together the four essential tools to start and run a professional crêpe post: wooden spatula, batter ladle, rozell (crêpe spreader) and a 25 cm stainless-steel pan. These accessories make the difference between an uneven crêpe and a regular, well-spread crêpe with the right thickness. For a restaurateur buying an electric or gas crêpe maker for the first time, getting this kit at the same time avoids being stuck at the first service for lack of the right tools.
The role of each accessory
Each tool in the kit has a precise function in making a professional crêpe:
- The batter ladle
- The ladle doses the amount of batter poured onto the plate. Dosing is one of the most important factors for an even thickness from one crêpe to the next. A ladle sized to the plate (neither too small nor too large) pours the same amount each pass with no weighing. For a Ø 39.5 cm plate, a 100 to 120 ml ladle is the standard size for a thin wheat crêpe. For a thicker buckwheat galette, increase the poured amount by a third.
- The rozell (crêpe spreader)
- The rozell is the centrepiece of the crêpe cook's craft. This wooden (or plastic) tool spreads the batter into an even circle immediately after pouring. The technique is to lay the rozell flat on the poured batter and spread it in a single fast circular motion — the whole final crêpe thickness is set in the first 3 seconds. A rozell that is too short or of poor stiffness makes spreading uneven and produces crêpes thick on one side, thin on the other.
- The wooden spatula
- The spatula lifts and turns the crêpe. It must be long enough to pass under the whole crêpe surface in one move. Using wood (or plastic on some professional models) avoids scratching the plate — cast iron, if scratched, loses its natural seasoning and becomes sticky. The wooden spatula is the only tool recommended in contact with the hot plate.
- The 25 cm stainless pan
- The 25 cm pan with non-stick coating is the back-up tool for crêpes away from the main plate: reheating already-cooked crêpes, finishing filled galettes in the oven, preparing flambéed crêpes Suzette in the dining room. It also serves as a fallback if the main plate is busy and a single crêpe is requested without waiting. Its 25 cm diameter suits individual dessert-format crêpes.
Materials and durability
The kit combines three material types according to each tool's function:
- Natural wood (rozell, spatula, ladle handle): wood is the traditional material of crêpe tools. It does not conduct heat (comfort in service), does not scratch the cast-iron plate (preserving the seasoning), and offers a natural grip. For maintenance, wash by hand in warm water with no aggressive detergent — wood does not tolerate the dishwasher or prolonged soaking.
- Stainless steel (ladle head, spatula frame, pan): corrosion-resistant, professional-dishwasher compatible for the metal parts, easy to disinfect. The stainless pan with non-stick coating washes in warm water — avoid abrasives that scratch the non-stick coating.
- Non-stick coating (25 cm pan): makes releasing crêpes easier and reduces the amount of butter or oil needed. The life of a non-stick coating depends on the utensils used: use only the wood or plastic spatula, never metal on the coating.
Dimensions and storage
The packaged kit measures 490 mm long × 150 mm wide × 90 mm high for a weight of about 1.5 kg. This compact format stores under the counter, in a worktop drawer or in a wall utensil pouch — without taking up precious kitchen space. The long tools (rozell, spatula, ladle) hang on a magnetic bar or a wall hook during active service to keep them within immediate reach during the crêpe service.

What restaurateurs ask
- Are the kit accessories compatible with all crêpe makers in the catalogue?
- Yes. The rozell, spatula and ladle are universal tools suited to all crêpe-maker plates — round or rectangular. The ladle works equally with a Ø 39.5 cm plate (round single) or 400 mm (rectangular). The rozell is used on any flat professional crêpe-maker surface. The 25 cm pan is a tool independent of the main plate.
- Does the crêpe-maker plate need oiling before using these tools?
- On a new plate, yes: the initial seasoning must be created. Coat the hot plate (200°C) with a cloth soaked in lard or clarified butter, let it smoke lightly, wipe the excess, repeat 3 to 4 times. A well-seasoned plate is naturally non-stick and needs very little fat in service. If the plate still sticks after the initial seasoning, repeat the operation — seasoning improves with regular use.
- How often should the wooden rozell and spatula be replaced?
- In intensive professional use (daily crêperie service), the wooden rozell and spatula are generally replaced every 6 to 18 months depending on use intensity. Signs to replace are: cracks in the wood (bacteria retention), blade deformation (a bowed rozell that no longer spreads flat), or excessive browning of the wood becoming brittle. In a professional kitchen with HACCP, check the state of wooden utensils at every service — their porous surface is harder to disinfect than stainless.
- Can the 25 cm non-stick pan go in the oven or dishwasher?
- The stainless pan can generally go in the oven up to 200°C if the handle allows. For the dishwasher, the stainless part can go in but the aggressive high-temperature cycles of professional dishwashers can degrade the non-stick coating over the long term — hand washing is recommended to preserve the coating's life. Never use an abrasive pad or scouring product on the non-stick coating.
