The 280 mm conveyor toaster is the high-capacity model for bread formats that exceed the width of the standard 210 mm conveyor. Same operating logic (bread laid on one side, out toasted the other), same power (3 kW), same theoretical pace (400 slices/hour) — but with a 280 mm belt that accepts half-baguettes flat, whole ciabattas and wide catering breads. At €1,680 excl. VAT, i.e. €120 more than the 210 mm, it is the conveyor for establishments whose menu includes non-standard bread formats in high volume.

280 mm belt: which formats pass?

The belt width is the critical dimension of a conveyor. The bread must pass flat on the belt without overhanging the sides:

  • Half-baguette lengthwise: a half-baguette cut along its length is 7 to 9 cm wide — it passes easily on a 210 mm belt. But a baguette cut crosswise and laid flat (cut face down) can be 7–9 cm × 25–30 cm long — the 280 mm width offers more room.
  • Whole ciabatta: a standard ciabatta is 18–25 cm wide — it does not pass flat on a 210 mm belt. The 280 mm belt accepts it up to 25 cm wide.
  • Sourdough or grain bread with a wide section: artisan breads cut into thick slices can be 15–22 cm wide — the 280 mm belt covers these formats.
  • XXL burger buns: brioche buns of 15–18 cm diameter (smash burger, XXL double burger formats) that overhang the 210 mm belt pass in the 280 mm.
  • Panini format or special restaurant breads: panini breads or non-standard special breads (wide round breads, oval buns) up to 280 mm wide.

Why 280 mm vs 210 mm for an almost identical price?

€120 gap for 70 mm of extra belt — the difference is small in proportion to the total price but decisive in terms of format compatibility:

  • If 100% of the bread range served passes in 210 mm (standard burger bun, sandwich loaf, thin half-baguette), the 210 mm is enough and saves €120.
  • If part of the menu uses wide formats (ciabatta, XXL brioche, wide sourdough), the 280 mm avoids cutting or folding the bread before toasting — one gesture eliminated in active service at 400 slices/hour represents significant operator time.
  • For establishments that do not yet know which bread range they will serve (opening, menu testing), the 280 mm offers more future flexibility with no major extra cost.

Operation and settings

Like all the conveyors in the catalogue, the 280 mm is set on belt speed and element temperature — the two parameters that together determine the toast level:

  • Slow speed + high temperature: thick bread, thick crust (sourdough, rustic ciabatta).
  • Fast speed + standard temperature: brioche or sandwich loaf (fat and sugar burn faster).
  • Median speed and temperature: standard burger bun — the starting setting for tests.

The 400 slices/hour pace is reached with a high belt speed and thin breads. In practice, in service with alternating bread types and loading pauses, the real pace is 200 to 300 slices/hour in continuous service.

What restaurateurs ask

Can the 280 mm conveyor pass a whole baguette without cutting it?
No — neither conveyor accepts a whole baguette without cutting. A baguette is 55–65 cm long and 7–9 cm wide. The width (7–9 cm) passes in both conveyors (210 or 280 mm belt). It is the length that is the problem: both conveyors have a length limit set by the length of the heating tunnel and the belt. A 25–30 cm half-baguette passes in both models. The 280 mm is useful for wide breads (>210 mm wide), not for long breads.
Is the size difference between the two conveyors (750×435 vs 500×570 mm) significant?
Yes. The 210 mm is wider (750 mm) but shallower (435 mm) and very flat (260 mm high). The 280 mm is more compact in width (500 mm) but deeper (570 mm) and taller (435 mm). In a professional kitchen, the impact on space depends on the worktop configuration: the 210 mm suits long, narrow worktops better, the 280 mm more square worktops. Both weigh about 24–25 kg — they stay movable by two people but are not relocated daily.
Can the 280 mm conveyor be used for pastries like croissants?
No, and it is not recommended for laminated pastries in general. The mechanical pressure exerted by the belt guides can crush the laminated structure of a croissant or a pain au chocolat. To reheat pastries, an element toaster like the 2-level type (radiant heating, no mechanical contact) is far better suited. The conveyor is optimised for dense-structure breads that withstand the mechanical pass — buns, bread slices, ciabattas — not delicate pastry products.
What is the maintenance of the 280 mm conveyor compared with the 210 mm?
Maintenance is identical between the two models: empty the crumb tray after each service, wipe the outer walls with a damp cloth weekly, clean the inner tunnel with a soft brush once a week. The extra belt width of the 280 mm adds no maintenance constraint. Both conveyors have a crumb collection tray — the only possible difference is the tray volume (a wider belt produces more crumbs), which may need more frequent emptying in intensive service with breads that crumble.
