Glass-ceramic or cast iron: which plate for a professional panini grill?
Cast iron offers high thermal inertia once up to temperature — it holds the heat through frequent openings. Glass-ceramic heats faster, returns to temperature more quickly after each loading and cleans effortlessly. For a fast-paced service with high rotation, glass-ceramic is often preferred. Cast iron remains relevant for long cooking or thick grilling where inertia is an advantage.
What panini-grill power for a restaurant serving 80 paninis per service?
