The Série 650 single-tank pasta cooker is the first mid-range model of the pasta-cooker range. With an 18.5-litre tank and 5.67kW of power, it clearly outsizes the entry level (3kW) with a capacity dimensioned for a regular restaurant service. At €2,880 excl. VAT, it targets establishments that have outgrown an entry cooker and want a reliable mid-range unit for a daily service of 40 to 70 covers.

How a Pasta Cooker Works

A pasta cooker is a heated water bath fitted with perforated baskets. You portion the pasta into a basket, lower it into the boiling water, and lift it out to drain the instant cooking is done — no pouring a heavy pot of boiling water through a colander. Each basket cooks and drains its own portion, so orders are served at an even, controlled doneness throughout the service. A drain tap empties the tank at the end of service without handling boiling water by hand.

Single or Double Tank: Which Configuration

A single-tank cooker has one water bath — ideal for a focused pasta offer cooked one type at a time. A double-tank cooker has two independent baths, each with its own heating, which unlocks three things: cooking two pasta types at once (different cooking times handled in parallel), relay service (one tank cooking while the other holds), and allergen separation (a dedicated tank for gluten-free pasta, for simpler HACCP traceability). Choose single for steady moderate volume, double for high volume or a varied pasta menu.

Stainless Steel, Water Management and HACCP

The tank and body are food-grade stainless steel. The integrated drain tap empties the bath cleanly; descale the tank regularly so heat transfer stays efficient and the water stays clean. Smooth stainless surfaces wipe down between services and slot straight into your HACCP cleaning plan.
