The Diamante 70 D72/10TVTC glass-ceramic cooktop is the range's standard 2-zone cooking block: 5.2 kW on three-phase 400V, two round heating zones, a 400×730 mm profile — the 1-chef format of the Diamante 70 line. It slots into a modular cooking line alongside an oven, a tilting pan or a wok, providing two cooking posts at low or high heat with no flame or gas.

- Restaurant with no gas access or in a mixed induction/glass-ceramic zone: the glass-ceramic surface heats evenly and precisely with no flame. Ideal for delicate cooking (sauces, reductions, creams) that benefits from steady, controlled heat.
- Hotel and catering: standardisation on flameless electric surfaces for reinforced fire safety. The Diamante 70 profile aligns with the range's other equipment.
- Compact brigade kitchen: one chef, two active zones — for restaurants with a tight menu or brigades in a limited space. The 400 mm width leaves room for other equipment on a 1-metre run.
- Dark kitchen or catering lab: flameless, with an easy-clean flat surface, the D72 glass-ceramic plate is perfectly suited to shared or rented production spaces.

- Glass-ceramic or induction for a Diamante 70 line?
- Glass-ceramic heats by an element under the glass surface — compatible with any flat-bottomed pan (stainless, aluminium, cast iron). Induction only heats magnetic pans but offers a more instant response. For kitchens with mixed pans (including aluminium or copper), glass-ceramic is more universal. For precision and speed, induction wins.
- Can any pan be placed on a professional glass-ceramic cooktop?
- Yes. Unlike induction, glass-ceramic accepts all materials: stainless steel, aluminium, copper, cast iron, flat-bottomed ceramic. The only constraint is a flat base wide enough to cover the heating zone. Pans with a domed base or a small diameter (under 12 cm) heat less evenly.
- Is cleaning a glass-ceramic surface harder than stainless or cast iron?
- No, on the contrary. The flat glass-ceramic surface cleans with a specific scraper and a glass-ceramic product right at the end of service (warm surface, not cold). Spills do not soak into the surface and form no carbonised residue if cleaned quickly. In practice, a glass-ceramic cooktop is faster to clean than the cast-iron grille of a gas range.
