Fan-assisted static cooling: cold that does not dry out produce

There are two families of refrigeration in professional cabinets, and they do not serve the same purpose.

  • Forced-air (ventilated) cooling blows air continuously. It evens out temperature quickly, but it dries: unwrapped meat, dough, rind cheese or salad lose surface moisture over the hours.
  • Fan-assisted static cooling, used here, lets air circulate naturally by convection, with a fan helping it spread. The result is the temperature stability of an assisted system, without the constant airflow that dries out uncovered products.

It is the right choice when you store a lot of produce in open containers, charcuterie, cheese, fresh pasta or lightly wrapped preparations. If instead you need ultra-fresh produce at a precise sub-zero temperature, a forced-air cabinet is the answer — our team will point you to the right model.

1,200 litres across two doors: organising a brigade

Two doors on one cabinet is not only a question of volume: it is a way of organising your cold storage.

  • Left side: the mise en place for the current service — starters, garnishes, desserts. A frequently opened zone, facing the plating station.
  • Right side: rotating stock — marinated proteins, next-day preparations, start-of-week deliveries. Fewer openings, so a thermally more stable zone.
  • The 6 GN 2/1 shelves accept standard gastronorm containers without adapters. Your production trays go straight in, which removes one handling step and one container to wash.

Usable interior volume measures 1220 × 680 × 1390 mm. The doors close by themselves if left ajar — passive protection during a busy service, when nobody is watching the latch.

What to know before ordering

  • Defrosting is manual. Plan the operation every few weeks depending on how often the doors open and how humid the kitchen is. That is the trade-off of static cooling: less electronics, fewer failures, but one maintenance step to schedule.
  • Hinges are not reversible: one door opens left, the other right. Check the opening direction against your kitchen flow before installation.
  • Maximum ambient temperature: 32 °C. Above that the unit struggles to hold the set point. In a kitchen that regularly exceeds it, keep the cabinet away from heat sources and ventilate the room.
  • R290 refrigerant — a natural gas with very low climate impact, now the standard on new-generation cabinets. It simply means not drilling the panels and calling a qualified refrigeration engineer for any work on the circuit.
  • Plug and play: a 230 V single-phase socket is enough, no special connection required. The cabinet arrives on castors — position it and plug it in.

Fan-assisted static, as here. Forced air evens out temperature faster but dries unwrapped products over time. For stock that sits for several days — charcuterie, cheese, prepared trays — static preserves texture and weight better.
How often does it need defrosting?
Defrosting is manual and is usually scheduled every few weeks, depending on how often the doors are opened and how humid your kitchen is. The reliable sign is frost forming on the evaporator at the back of the cabinet. Defrosting on time keeps consumption at its nominal level.
Do gastronorm containers fit directly?
Yes. The 6 shelves are GN 2/1, the reference size in professional kitchens. Your production, marinating or plating trays sit straight on them, with no adapter and no decanting.
What is the real electricity consumption?
4.13 kWh over 24 hours under standard conditions, for a nominal 350 W. The 60 mm insulation and the self-closing doors are what weigh most on real consumption: a door left ajar through one service costs more than the difference between two models.
Can it be moved to clean the floor?
Yes, it ships on castors. Cleaning the floor under the cabinet — often skipped, yet checked during HACCP inspections — needs no dismantling or heavy lifting, despite the unit's 182 kg.
