Humid Heat: Why Bain-Marie for Moist Dishes
A bain-marie holds food hot using water as the heat vector: the GN containers sit in a heated water bath, and the gentle, even, moist heat keeps sauced and moist dishes — curries, stews, sauced meats, rice, vegetables in sauce — at serving temperature without drying them out or forming a crust. That is the key difference from dry heat: a bain-marie protects texture and moisture over a long service, which is exactly what hot buffet and world-cuisine dishes need.
Built for Continuous Service
The tempered-glass front and LED lighting present the food clearly to customers, while the thermostat (30–85°C) holds the exact serving temperature. A drain tap and water tray make water management simple — top up and empty without awkward handling. It runs on single-phase 230V (standard socket), so there is no three-phase installation to plan.
Stainless Steel, Cleaning and HACCP
The cabinet is built in food-grade stainless steel. Empty the water bath via the drain tap at the end of service, wipe down the stainless surfaces and the glass, and the unit slots straight into your HACCP cleaning plan. Holding cooked food at 30–85°C also keeps it within the safe hot-holding range your HACCP plan requires.
