The D74/10KBEI electric tilting braising pan is the all-electric version of the 43-litre block of the Diamante 70 line: 10 kW on three-phase 400V, manual tilting, 800×730 mm format. For kitchens with no gas supply — a building in a residential zone, a dark kitchen, a hotel, a kitchen under renovation — it offers the same brigade capacity as its gas counterpart on a dedicated electric circuit.

For which kitchen, which gas-free context?

  • Restaurant in a zone with no natural gas: in dense urban centres or premises with no compliant gas extraction, this 43 L pan is often the only option to reach this capacity in a flameless kitchen. Three-phase 400V is generally available in commercial premises even when gas is not.
  • Dark kitchen in a mixed building: the internal rules of many co-ownerships forbid gas in professional production spaces not classed as specific ERP. The electric pan meets this constraint with no sacrifice on production volume.
  • All-electric hotel and catering: in central kitchens standardised on electric for fire-safety management, this block fits into an all-electric Diamante 70 line alongside induction hobs, combi ovens and electric boiling pans. A single energy type to manage, a single maintenance contract.
  • Ghost kitchen and shared kitchen: shared production spaces often bill energy by actual consumption. Electric allows a precise per-kWh reading, impossible with gas shared on a collective meter.

⚠️ Three-phase 400V required, dedicated 10 kW circuit. Check with your electrician before installation. This 77 kg block is fixed equipment.

43 L tilting vs 21 L fixed tank: which model to choose?

In the electric Diamante 70 range, two braising pans coexist with very different use profiles. The choice depends on production volume and the post's role in the brigade.

The 21 L fixed tank is the sauce and meticulous-cooking post of a tight-menu restaurant. The 43 L tilting is the production tool for brigades handling volume and needing to empty quickly between batches.

What restaurateurs ask

10 kW electric vs 14 kW gas: is the electric pan really less powerful?
In nominal power, yes — 10 kW electric vs 14 kW gas. The difference is felt mainly on the initial heat-up (gas heats faster from ambient to 180°C) and on high-temperature stir-fries. For braises, simmers and long cooking — the main uses of a 43 L pan — 10 kW electric is perfectly sufficient. Moreover, electric regulation is more precise at low temperature, an advantage for delicate cooking.
Three-phase 400V: how do I check my premises are compatible?
Commercial premises in France are supplied either with single-phase 230V (a two-pole breaker at the board) or three-phase 400V (a 4-pole or 3P+N breaker). Open the main electrical board: if you see breakers with 4 connection terminals or a three-phase meter, you are compatible. A qualified electrician confirms in 5 minutes on site. For this 10 kW block, a dedicated circuit with a 25 A/30 mA RCBO is recommended.
Manual tilting at 43 L: how often can the operation be repeated?
The manual tilting mechanism (worm screw or crank) is designed for regular use in professional service — several empties per service. There is no frequency limit linked to the equipment itself. The practical limit is operator effort: for kitchens emptying the pan 5 times or more per service, the ergonomics of motorised tilting (available on the Prestige 700 range) is an option to consider when deciding to buy.
Can this block run on a single-phase circuit with an adapter?
No. A three-phase 10 kW appliance cannot run on single-phase 230V, even with a converter — the power available on a standard single-phase residential circuit is limited to 3-6 kW, and mono/three-phase converters introduce significant losses and electrical risks. If your premises are single-phase, you must plan either a three-phase extension (works) or different equipment sized for single-phase.
