- In nominal power, yes — 10 kW electric vs 14 kW gas. The difference is felt mainly on the initial heat-up (gas heats faster from ambient to 180°C) and on high-temperature stir-fries. For braises, simmers and long cooking — the main uses of a 43 L pan — 10 kW electric is perfectly sufficient. Moreover, electric regulation is more precise at low temperature, an advantage for delicate cooking.
- Three-phase 400V: how do I check my premises are compatible?
- Commercial premises in France are supplied either with single-phase 230V (a two-pole breaker at the board) or three-phase 400V (a 4-pole or 3P+N breaker). Open the main electrical board: if you see breakers with 4 connection terminals or a three-phase meter, you are compatible. A qualified electrician confirms in 5 minutes on site. For this 10 kW block, a dedicated circuit with a 25 A/30 mA RCBO is recommended.
- Manual tilting at 43 L: how often can the operation be repeated?
- The manual tilting mechanism (worm screw or crank) is designed for regular use in professional service — several empties per service. There is no frequency limit linked to the equipment itself. The practical limit is operator effort: for kitchens emptying the pan 5 times or more per service, the ergonomics of motorised tilting (available on the Prestige 700 range) is an option to consider when deciding to buy.
- Can this block run on a single-phase circuit with an adapter?
- No. A three-phase 10 kW appliance cannot run on single-phase 230V, even with a converter — the power available on a standard single-phase residential circuit is limited to 3-6 kW, and mono/three-phase converters introduce significant losses and electrical risks.
