The contact clamshell is the tool that changes the rhythm of a meat post: instead of searing one side, turning by hand, watching the other side, you place the piece between the two plates and the heat works both surfaces at once under controlled pressure. Contact grill vs griddle: what it changes operationally

The 3 memories let you store 3 distinct profiles — for example, key 1 = 120g burger patty, key 2 = chicken breast, key 3 = fish burger. Once programmed, the recipes are reproducible with no manual setting. The operator selects the number, places the piece, the clamshell handles the cycle and opens on its own.
Does the clamshell work well for chicken or only for beef?
